Description

This lemon garlic roasted broccoli is a quick, healthy, and flavor-packed side dish that’s perfect for weeknight dinners or meal prep. Roasted at high heat, the broccoli becomes crisp-tender with caramelized edges, while fresh lemon juice and toasted garlic infuse it with bold, savory brightness.

Ingredients

  • 1.5 lbs. broccoli florets: provides the base with hearty texture and flavor
  • 4 cloves garlic, thinly sliced: adds a bold, toasty aroma and flavor
  • 2 tablespoons extra-virgin olive oil: helps in roasting and adds richness
  • Zest of 1 lemon: infuses intense citrus aroma
  • Juice of 1 lemon: adds brightness and acidity
  • Kosher salt, to taste: enhances all natural flavors
  • Black pepper, to taste: adds mild heat and depth

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. Place broccoli florets and sliced garlic on a rimmed baking sheet.
  3. Drizzle olive oil over the top, then add lemon zest, salt, and pepper.
  4. Toss everything with your hands to coat evenly and spread into a single layer.
  5. Roast for 15–20 minutes, tossing halfway through, until broccoli is tender and slightly browned and garlic is golden.
  6. Remove from the oven and immediately squeeze fresh lemon juice over the top.
  7. Season with additional salt and pepper if needed, toss to coat, and serve warm.

Notes

  • To prevent garlic from burning, toss halfway and monitor closely in the final minutes.
  • Use pre-cut broccoli florets to save prep time.
  • Add red pepper flakes before roasting for a spicy variation.
  • Mix in cauliflower, carrots, or chickpeas for added texture and protein.
