Description

These Herb & Garlic Breakfast Potatoes are crispy on the outside, tender inside, and bursting with rich garlic and herb flavor. Perfect as a hearty breakfast side or a delicious addition to any meal, this easy recipe uses simple ingredients and minimal prep for maximum taste.

Ingredients

  • 5 tbsp olive oil: adds richness and helps achieve crispiness
  • 5 cloves garlic, minced: provides deep, aromatic flavor
  • 1 tbsp fresh herbs (thyme and rosemary): infuses freshness and earthiness
  • 2 tbsp dried Italian herbs: adds balanced, savory notes
  • 2 pounds potatoes, cut into ½-inch cubes: the hearty base of the dish
  • 1 tsp black pepper powder: adds mild heat
  • Salt to taste: enhances the overall flavor
  • 1 tsp red chili flakes: optional, for a spicy kick
  • 1 tbsp fresh coriander leaves, chopped: for garnish and freshness

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking tray with parchment paper or lightly oil it.
  2. In a small pan, heat olive oil and add minced garlic, fresh herbs, and dried Italian herbs. Sauté until the garlic is lightly browned and aromatic.
  3. Place the cubed potatoes in a large mixing bowl. Strain the infused oil into the bowl and discard any burnt garlic bits.
  4. Add black pepper, salt, and red chili flakes. Toss until the potatoes are evenly coated with the seasoning.
  5. Spread the potatoes evenly on the prepared baking tray, ensuring they don’t overlap.
  6. Bake for 40 minutes, tossing halfway through to ensure even roasting and crispiness.
  7. Once golden brown, remove from the oven and garnish with freshly chopped coriander leaves. Serve hot and enjoy!

Notes

  • For extra-crispy potatoes, parboil for 8–10 minutes before baking.
  • Don’t overcrowd the tray—space helps achieve even crispiness.
  • Use Yukon Gold or Russet potatoes for best texture and flavor.
  • Store leftovers in an airtight container for up to 3 days and reheat in the oven or air fryer.
  • Use a cast iron skillet for a crispier, restaurant-style finish.
