Ingredients

2 cups plain Greek Yogurt
1 tbsp Vanilla Extract
2 cups Chopped Fruit (any combination of berries, mango, kiwi)
12 tbsp Sweetener (honey or maple syrup, optional)
Non-dairy yogurt, parchment paper, and additional fruit for topping


Instructions

Line an 8×8-inch baking dish with parchment paper.
Flatten a paper towel to blot moisture from the fruit.
Combine Greek yogurt and vanilla extract in a large bowl.
Whisk yogurt and vanilla until smooth.
Fold in chopped fruit using a spatula.
Spread the mixture evenly in the prepared baking dish.
Place the container in the freezer for 2 hours.
Remove and let sit for 10 minutes before slicing.
Cut into 24 small rectangles using a knife.
Return the cookies to the freezer for 24 hours to firm.
