Ingredients
All-purpose flour – 1 cup (5 oz by weight)
Cocoa powder – 6 tbsp (1.75 oz) – Use Dutch-processed for deeper flavor
Baking powder – 1.5 tsp
Baking soda – 1/4 tsp
Sea salt – 1/4 tsp
Chocolate chunks/chips – 3/4 cup (plus extra for topping)
Granulated sugar – 3/4 cup
Unsalted butter, melted – 4 tbsp
Large egg – 1
Buttermilk – 1 cup
Vanilla extract – 1.5 tsp
Instructions
Preheat oven to 400°F. Line a muffin tin with paper cups
Sift together flour, cocoa powder, baking powder, baking soda, and salt. Toss chocolate chunks into the dry ingredients
Whisk together sugar, melted butter, egg, buttermilk, and vanilla until well blended
Stir wet mixture into dry ingredients until flour is just incorporated but lumps remain. Do not overmix
Use a large cookie scoop to fill muffin cups nearly full
Bake for 18-20 minutes, until muffins reach 195°F internally or spring back when touched
Remove from pan and cool on a wire rack before serving
Notes
For best results, use high-quality Dutch-processed cocoa powder
Top with additional chocolate chips for an extra chocolatey finish
Store in an airtight container at room temperature for up to 3 days
