Instructions
- Bring a large pot of salted water to a boil. Cook linguine until al dente, reserve 1/2 cup pasta water, then drain and set aside.
- Pound chicken breasts to even thickness and season all over with Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through (165°F internal temp). Slice into strips and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 30–60 seconds until fragrant.
- Add diced tomatoes and cook for 2 minutes, stirring occasionally.
- Pour in heavy cream, stir in remaining Cajun seasoning and parmesan cheese. Simmer gently until sauce thickens slightly.
- Add cooked pasta and chicken strips into the sauce. Toss to coat everything evenly. Add reserved pasta water as needed to loosen the sauce.
- Serve hot, garnished with parmesan and fresh parsley.
