Ingredients

  • 8 oz linguine pasta: forms the hearty base of the dish

  • 2 Tbsp unsalted butter: adds richness and flavor to the sauce

  • 1 1/2 cup heavy whipping cream: creates a smooth, velvety sauce

  • 2 Tbsp parsley, finely chopped: for garnish and freshness


Instructions

  1. Bring a large pot of salted water to a boil. Cook linguine until al dente, reserve 1/2 cup pasta water, then drain and set aside.
  2. Pound chicken breasts to even thickness and season all over with Cajun seasoning.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through (165°F internal temp). Slice into strips and set aside.
  4. In the same skillet, melt butter over medium heat. Add garlic and sauté for 30–60 seconds until fragrant.
  5. Add diced tomatoes and cook for 2 minutes, stirring occasionally.
  6. Pour in heavy cream, stir in remaining Cajun seasoning and parmesan cheese. Simmer gently until sauce thickens slightly.
  7. Add cooked pasta and chicken strips into the sauce. Toss to coat everything evenly. Add reserved pasta water as needed to loosen the sauce.
  8. Serve hot, garnished with parmesan and fresh parsley.
